Stripping veneered table tops

Hey all. Our shop has been approached by a restaurant/kitchen design company to strip some old commercial restaurant table tops, so that they can be refinished. We are not repairing the veneer, just getting down to bare wood. What would be the best way to do this? Is simply sanding off the old finish an option, or do we have to use chemicals? What chemicals would be safe to put on veneer? I don't want to destroy the glue. They gave us one table top to experiment on. I can post a pic if it would help (just don't have one currently). It appears to just be finishd with stain and poly.
