Which Glue or Construction Adhesive for mobile base project?

I have Titebond 2 and 3 as well as Gorilla Wood Glue and a tube of Loctite PL 8X construction adhesive. Which would you use for putting together the laminations of plywood for the side rails? I plan on drilling and carriage bolting with fender washers the sides in a number of places as well.

Titebond 3 has a longer open time to let you spread all the glue and get the clamps on the stack to laminate it .

I have a gallon, think that will be enough?

Yes, coat both surfaces thinly but don't waste it. You should get some squeeze out when you clamp but not come flooding out.
