I put mushrooms, mozzarella and ricotta in one, ham, mozzarella and ricotta in another. For the last one I put spinach, mozzarella and ricotta in it. Their signature calzone was dubbed the "Wimpy Skimpy"; Spinach, Pepperoni, Olives, and Mozzarella. Very good indeed, and this was in the domain of Clam Cakes, Lobsters, and New England Clam Chowder. Being in the "west" though, hers are usually round and thin crust even though the pizza peel I made for her isn't round! I've never had a calzone, but it "looks" like a burrito to me too. I was cutting the thick chewing crust and right when I made it through I slipped with my knife and fork and shot it across the room. I cried a little.
