Jfitz
Sounds to me like you cut them so thin they only had one side................I like sharp! "Mobius sharp"? I have the MKII and like it a lot. Definitely gives me consistent results. I'm currently using a DMT stone (when needed) and then Norton water stones (1000 4000 8000) but I'm thinking Shapton will end up on my "wish list" at some point. Curious.... do many people use honing compound/strops etc, or just go from the 8000 to the workpiece?

Nub Thumb
I go to 8000 and get great results. But I recently made a couple of stropes on dowels for some new bent knives and I've started stroping after the 8000. I've been impressed. I can also touch up the blade without removing the chip break.
