Finishing Chinquapin

Hey all- I am making a breakfast bar out of some west coast chinquapin...I believe it is Giant Chinquapin. The wood is fine grained and hard, a grey brown similar to chocolate milk. Some sections of it are a creamy white with some fine looking spalting. I would like to darken the chocolate parts if possible, without obscuring any grain or figure. Anyone worked with this wood before? Can I treat it like walnut? How do you darken it? I am planning on a final finsh with a wiping varnish- and I would like to leave the spalted sapwood the creamy color it is. Any suggestions? :D
