Card edges can groove your soft stones. This is the big reason to joint with a file. You can do it with a stone, but that cuts into efficiency when you need to dress the stone. The burr is because of the mechanics of usage. You do not shear cut the same as a knife edge will turned around the other way. You technically can get by without a burr if you have a sharp edge.
