Butcher block countertop finishing with watch oil and finish

Hey so I’m using watch butcher block oil and finish also, I have done 3 coats so far and am debating on doing another but I wanted to ask if anyone knew if you NEED to sand it before you do another coat or if I can put another coat on without sanding… thanks for any help.

Mfg. application instructions say to scuff sand between coats with 400 grit. I suspect you could skip that step and get away with it, but it is possible the second coat won't adhere well. That product is a tung oil / alkyd resin blend, which doesn't 'melt' into previous coats,  like shellac or lacquer.
