The solution that seems the most doable for me is the 2 part poly. But I'm having trouble finding some. Anybody know of any good ones, that preferably aren't stupid expensive. I've used and really like West systems stuff but, I'm not sure if this is right for you? I'm not sure where you're located but, if you pm me, I'll give you a semi-local contact that does this for a living. He does a 2 part poured finish that is super awesome.
