Take a notepad , tape measure and a camera and measure the nice ones you think are too expensive. The stool in the picture is pretty simple, straight legs makes building one much easier. Can you do mortice and tenon joints for the legs to the cross rails? A Domino machine would also work. Dowels are tricky for stools cause the cross rails could get loose and rotate. Leather upholstery isn't easy or cheap. Depending on how many stools you want to build ,materials and your time will add up quickly. I don't know about plans, I build custom pieces for my clients. I would jazz it up a bit. and.. I don't plan on saving a ton but for the same money would be able to build something nicer with higher quality wood.
