Either buy the jig & bit or have a  good dowel jig and careful layout of the intersecting holes to use those Tite Joint Fasteners. I've used them for years. If the little rod to tighten them is lost or bends use a tape wrapped drill bit shank.

Making a practice joint is a very smart idea ! This can prevent a mistake on the actual countertop. Drilling the large hole too deep and coming through the  good face is a nightmare, trust me ,been there done that (didn't want the tee shirt )
