It gives a very close-to-the-wood finish, much like straight oil but the little bit of varnish in it seals the fibers a little better. I don't see any advantage over mineral oil or butcher block oil on a cutting board. Doesn't strike me as a good or bad fit...can't really think of a reason why you should or shouldn't use it.
