You could bevel the edge to visually reduce the thickness. A thinner one piece top from that slab will have a much greater chance of warp , twist, bow , crack etc.  1 1/4 is as thin as I would take it. Try to remove approximately the same amount from each side. 

A bevel type raised panel bit would be an easy way to bevel the underside if running it on edge through the tablesaw doesn't appeal to you.

Sorry for the quality of the pic. I think I will stop at 1.75” or so . You are right, the more I remove, the squirrely it will git!
