So when I shop for the walnut and the ends of all the boards are rough and painted green, How can I pick the boards that have some rift cut grain along either edge.  Must have rift cut for the legs.  Should I take my block plane and try to reveal the end grain?  How to you guys address that problem?

I sympathize with you completely as I just purchased a butt load of walnut that wasn’t what I expected. Unfortunately, I cut the boards to rough lengths before jointing and planing. I called the supplier, semi bitching and complaining and asked if next time, I could bring a cordless skill saw to cut off a smidge of the end of the board and they said absolutely. Same goes true with a belt sander to test the surface.
