You made the right assumptions. You access the collet from above the table, but sometimes a collet extension is advisable or required. I  use the xtreme xtension Collett extension, lets me change bits with just an Allen wrench.

I am also in the process of building my router table.  Incra fence & positioner, Jessem lift, and for now an Incra top.  Eventually, I am considering building my own top and adding the SawStop sliding crosscut table dedicated to the router table.  Sounds crazy, and kind of ridiculous cost, but a sliding table for a router setup IMO would be quite nice.   Would make coping type cuts a breeze.  Yes, "might as well get a shaper" probably applies here, but shapers don't turn high RPM and shaper cutters are very expensive.

Did you check on the Festool CMS? It comes with a sliding table already.

Yep, sounds crazy, and kind of ridiculous cost, but it maybe close to the sum of the parts you're planning on buying. It doesn't look like a heavy duty workhorse though, gotta agree on that. I guess it depends on your workflow.

I'm particularly curious about the Flatbed Horizontal Table and the Precision Table.

The Flatbed thing is just weird, but since the table and fence are one in the same and aligned with gravity that might be an advantage. Maybe.

The Precision description describes it as a "sliding table", but the pictures don't depict the same.
