I've seen different ways of doing the juice groove and finger grips but I think yours is the way to go. Definitely safer then a lot of what I have seen. If the drawing bow produces a reasonably circular arc segment, I bet you could create a template / jig with extended arcs on both sides, and adjustable width, so you could cut the edges AND make the juice groove to match. To avoid burning I run the bit at a reduced speed and cut the flute in steps. The last cut is only about 1/32" deep and done in a fairly quick fluid motion. Hard maple really likes to burn given the chance. I find the juice groove challenging as well. Three reduced speed 1/8" steps on the plunge router and then a very light last pass.
