Popular Post RichardA Posted June 11, 2019 Popular Post Report Share Posted June 11, 2019 Well guys, after two months of horrible pain, I'm starting to get some relief. It's especially been noticeable the last 10 days. Physical Therapy, and my determination to get the hell out of the house. The pain use to be everywhere below the belt. Now it's scattered in just 4 or 5 places. and about a third less than a month ago. And easing. I've got a project that went on hold for me. And, I have a client that needs a couple of things made for his and his wife's future. It'll be nice as hell to get back out there and see what I've forgotten. My plus was that I was pretty pain free so I can't imagine what you have gone through. I think the TV thing gets worse by the fact that you are a captive audience and you can get away. When the PT lady pushes me to do 5 of something, I push to do 10, I do them, when she's not here and I do stuff I know will be helpful when she's not around. I want out of my jail., and I want to eat decent food. There just isn't decent food in grocery stores, it has to be made with care and love. Fortunately Making Red Beans and Rice is kinda easy, if you know a couple of secrets. For those of you that don't know, Red beans and rice is a Monday tradition in cajun country. You spend the weekend partying and Monday is the day they wash all the clothes from the whole week. Years ago it took all day to do that. So, they would make a dish that takes all day to cook. They soak the beans Sunday night and in the morning they set up with all the seasonings and spices and put it over the fire to cook slowly all day. At lunch time they would sear the sausage and add it to the beans, adding water as needed. Then an hour or so before eating, they'd take a metal spoon and crush a lot of the beans on the side of the pot to make the broth thicker. Then steam or boil the rice and serve. I didn't have the normal Cajun sausage, for this dish, but I did have sausage made from 50% Venison, 40% of gator and 10% of very fatty pork mixed with Creole seasoning.
