I used to take mine to 200 internal, but with a couple conversations with my dad I tried one at 185 internal and resting wrapped in foil and towels in cooler for an hour minimum. It pulls apart fine, and has a better texture in my opinion. I find the meat to be a tad mushy when taking all the way to 200. This all comes down to personal preference.

I have been using my Weber Kettle lately for smoking chickens lately. I use the snake method with the charcoal and can get a good 6-7 hours out of it.

At 185 I can't pull it period. It's sliced pork. Same with brisket.

 Have to assume that the internal temp rises at least 5-10 degrees during the resting period. I have done a few at the temp and that's what the family prefers.

At work, we've got a little mail closet that, over the years, has been used less and less. Everyone has a little cubby that we used to get pay stubs, upcoming event notices, etc... Now everything is email so I honestly check the mail closet a few times a year. This morning was one of those times and, to my surprise, there was an envelope waiting for me, hand written name and address and everything. An extra rare item indeed. It was a thank you card from a lady at work that retired at the beginning of last month. It was a nice surprise. I don't get hand written anything anymore. lol
